Fruity cupcakes

Cake time! I haven't made a recipe in a while. I love experimenting with food and this recipe turned out great! There are two different types of fruit cupcakes I made - Blackberry and white chocolate, Raspberry and white chocolate and the recipe for these are below:

What you will need:
  • 120ml milk
  • 4 tablespoons vegetable oil
  • 200g plain flour
  • 100g caster sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 10 rasberries or 10 blackberries
  • 100g white chocolate chips
  • 1 teaspoon of vanillla extract

1. Preheat oven to 200C.

2.Combine the flour, baking powder, sugar and salt.

3. Beat the eggs in a separate bowl and then add the milk, oil and vanilla to the eggs.

5. Gradually add the egg mixture mix to the flour mix and stir them both together. (Ensure that the batter is lumpy.)

6. Chose either the raspberries or the blackberries and add them to the mixture., as well as the white chocolate chips (If you want to make both, you can split the batter and halve them amount of fruit).

7. Gently pour the batter into the prepared muffin tin and bake immediately.

8. Bake for 20 minutes until the batter has cooked and enjoy your fruity muffins!
